I scrub them out with coarse salt, then I put a piece of lard or the fatty part of a piece of salt pork and place the pan in the oven at 225 degrees for hours until it absorbs. I repeat this several times to ensure the pan is seasoned. Don't wash with soap, don't soak it, just use hot hot water, and wipe clean, and add a bit of oil to the surface with a paper towel after drying first. I don't like to use cooking oil as it leaves a film and attracts dust, so I use a bit of bacon fat everytime i use the pan.
Clean with Salt.
