You could pour a poly self-leveling sealer over the entire top. I think this may require you to make a temporary wood liner to hold it until it dries.
If you are going to go forward with this project, you may want to think about updating the counters totally by pouring a layer of self-leveling concrete over it, or at least the island section. This is a much more stylish and new look.
You have beautiful counters! Leave as is. Save your time and sanity. Get yourself a pastry board, mat or marble. I have all 3 as I do these tasks on my bar height kitchen table. My counters are narrow and no space, not to mention yucky. Here are some examples.

I picked up my marble from the local stoneyard - it was a scrap, and they polished for me. I shove it under the living room sofa when not in use. Yes, my house is small!
You could do an epoxy flow. Using famowood. See YouTube videos to have best results.
Hi there, an epoxy covering is what came to my mind as well. It is clear, rock solid and smooth as glass.
These will never be level or smooth. It would be better to get a large piece of butcher block to put on top of the tile to use to for pastry.
I would not attempt that at all,they are to pretty.Get a separate board for all your cooking needs
Put a wood rim around, about 1/16" higher than the tallest tile and fill in the open are with epoxy. It will be gorgeous, level, hard as nails.
I read the sealer is a resin. Hope it helps 😎
