I have the same problem. As I am disabled with a power chair bumping into cabinet doors too. Honestly, with the exception of removing the doors not alot that can be truly done. With the exception of slowing down and becareful. And believe me its almost impossible.

A few solutions might be...
Add a rubber bullnose trim to the area you hit/rub against. If you notice next time your at the hospital you will see rubber bullnose trim on the walls to prevent damage from gurneys and rolling equipment. Try to slow down and be more cognizant of your surroundings. I know it's hard when you get busy and want to get things done, but honestly I can't think of another solution.
Are you sure you can't just take them off? I did that with a couple doors due to the fact that they were making my language too colorful. It was such a relief!
I would just remove the doors, as you suggested. If that is just not an option, remove the handles and have someone cut recessed areas in the top or side for opening. That also.e could give you a couple inches.
