My Holly Bushes are three years old. I'm one of these rebels that whacks limbs off anytime of the year that I feel like it, haven't had anything die yet! I just pruned mine two weeks ago. (In Missouri.)
Wait until very early in spring to prune the branches back. Do not disturb them in fall or winter.

Contact NC State University agricultural department for plant advice. I prune all year to some extent; try not to tale off more than one-third of a bush. Pruning should be done in a manner than perserves blooms and berry production. You do not want to ruin this coming years display of flowers and berries. Some hollies to do produce berries so it probably is fine to prune for shape any time. Each county has an Agricultural Extension Office and they will also give excellent info for free.
