Where are you moving to? You can always winter over in pots and set out in spring if too cold.
check the planting zone you are moving to.. there are guides on the net that if you type in your zip code it will give first and last frost dates. if your travel to the new place is between the frost dates, you should be ok.
What type of plants are you wanting to transplant? It depends on what it is.
I don't think it is so cold yet tat plants would dies in the back of a moving van. By December and January it might be another story. It also matter where you are coming from and where you are going! Outdoor plants may have to be kept inside if you are moving somewhere that freezes in the winter. I live in northern California and everything stays out all winter even though we et chilly days in the 40s and cold rain in the winter.
It depends on your weather/ and growing zone.

Pot your plants up and then bury them pot and all in the ground at your new home. it doesn't matter if that 'spot' is not where they are suppose to be planted in their forever home, just as long as they are in the ground! I have kept plants and trees planted this way for almost 5 years before I could figure out exactly where their forever home would be. I live in Ontario, Canada and our winters can be pretty brutal ;)
