Yes, and I would pat the cubes dry, maybe even let them sit on a towel for a little while before roasting.
Yes! You not only can soak them, you should soak them! It seems counter productive but if you soak them in salt water, rinse and pat dry, toss them in seasoning and oil, and then put them onto a hot sheet in a hot oven, they actually are crispier. I don’t know why but that’s what happens! 😊
