Use a heat gun to loosen the glue, sand after you remove and paint
This may not work as there may only be a particle board behind and this will not take to paint very well. If you are desperate, then remove the laminate, sand well to smooth out the glue, prime paint and then paint your finish color.
Or, after removing the laminate, cover them with something else like thin wood or beadboard. You could even try paintable wallpaper.
With your description I assume you have Thermofoil cabinets.
