Freezing Green Peppers With the 3-3 Method

My very small garden had some issues this year. What I mean is, everything basically died because I'm learning how to grow things in Central Florida and its a challenge for sure.
One thing that I have had more than a bounty of is green peppers. They have produced some really nice ones. Italian version, which are skinny and then the regular round ones that we all see in the store.
So, it was time to put some of these up in the freezer for future using the 3 - 3 method

So, it was time to put some of these up in the freezer for future using the 3 - 3 method
Clean, slice and dice your peppers.
Using a double broiler, get the water boiling.
Add a nice layer of the green peppers, cover and cook for 3 minutes.
Put the cooked peppers in ice water for 3 minutes.
Lay them out on a paper towel or towel to dry.
Store in freezer containers and these will last in the freezer for 12 months. I love adding this to casseroles and soups over the winter time.

Victoria D on Sep 09, 2014I wash and freeze mines when I buy on sale and cut as I need just frozen or thaw for a few minutes and they last me for months here in Miami.
