If you are going with a cast in place type - you should remove the laminate & install at least 1/2 ply. Add some wire mesh 4x4 or rebar &/or fibers in the concrete. Form up your edges to at least get you 1.5 to 2" thick counter and shore those edges up. Concrete mix needs to be as dry as possible with your color added - save some color so you can do a slurry mix to fill in any pinholes in the edges or top.
