Too Many Cranberries

Teri Mauerman Shehorn on Nov 28, 2014I make this every year, but in an 8x8 glass dish. It only uses 2 cups, most bags measure out to be about 3 1/2 cups, so you could double it. Not sure why they orginally did it in a pie plate when it makes a nice cake that needs no frosting. Shari on Nov 28, 2014One of my very favorite things to make with cranberries is fresh relish. It's super simple if you have a food processor. Dump one bag of (raw) cranberries into food processor. Cut one large orange into sections and put into the food processor with cranberries. (Add the orange peel too!). Pulse until rough chopped. Add sugar to taste (usually 3/4 to 1 cup) and about 1 cup of walnuts or pecans. Pulse until chopped fine. Refrigerate. (If your food processor is small, you can chop 1/2 the cranberries, orange and nuts, dump into a separate bowl and then do the remaining cranberries, orange and nuts. Mix in sugar last.) So tasty with turkey or chicken...or just by itself! Last Christmas I filled large Ball canning jars with some holly sprigs and cranberries, then added water and floating candles. Got the idea from Pinterest. (Where else?!)
