How bad is it? Drywallers who know their stuff can skim coat damaged walls so that they look like new. You cut down the dust by about 70% or more! If you decide to replace - get some good masks, goggles, and a shop vac with bags for fine dust, then seal off the area, and do the demolition yourself - will save a ton of money in labour and cartage. Have a 100+ yr old home and have had several plaster walls skim coated. They look like new drywall has been installed. Are you thinking of doing rewiring at the same time? A really good electrician can fish new line without doing damage. Am really lucky to have one - always amazed me.

You didn't say why you wanted to replace the sheetrock, mold yes replace... a few holes fix it.
