Kathrine I love the idea of stenciling them. If you haven’t stenciled before though, try to practice first. It’s not hard but if you’re stenciling with a specific stencil just make sure it looks right before using it on the actual piece. If you haven’t stenciled before do more of a dry brushing to start by dabbing some of the paint off the brush first. I like round foam brushes for this most of the time.

For me it kind of depends on my mood! But I do know that when I have taken hinges off in the past, they don't ever seem to go back on in the same way and so the doors don't close as well. I guess that bothers me more than a painted hinge.
if you number each piece even the screws as you take them off and number the area they came from..when putting them back on you will find they close the same as they always did.
