How long should I dry Mexican sun flowers for seeds

I planted Mexican sun flowers for the 1st time this year. They just started to shed petals and grow seeds. How long does it take for seed to mature? Do they need any cold storage after drying, or should I just keep them in brown paper sacking like one would sunflower seeds.
As you can see butterflies quite happy to visit.

    That is a beautiful flower.Drying mexican sunflowers is the same process as regular sunflowers. Start collecting the seeds in a brown paper bag as soon as you see the petals are falling off. Store is a cool location until you are ready to sow them.
