Is there a low cost way to have a wood countertop (butcherblock style) for my 3' x 7' island? I currently have 21 squares of 12" x 12" granite on it.

Have you looked at IKEA wood butcher block counters? http://www.ikea.com/us/en/catalog/categories/departments/kitchen/24264/

@Greenacres47 it could be worth it if the price is right. Our nearest IKEA is 3.5 hours away, but for purchases like that it could still be worth the trip. We met a couple as we were loading that drove from somewhere in Oklahoma to the Kansas City store to buy kitchen cabinets. I think they said their trip was six hours each way. I'd still keep them in mine. Another idea is using wood floors. The kinds with the smooth edges, not the beveled. They'd take longer to put in, but you'd still get the look you want. They have a tongue and groove for a snug fit. You'd have to miter the edges to finish it off, but that's doable too.

I purchased a piece of butcher board about that size from a local big box store. I think it was about $149

We just made our kitchen island using 2 x 6's from the local lumber yard. We had them trimmed on the sides as they were a bit rounded. We glued them and let them sit for about 24-hours. Sanding and oiling/waxing to finish. LOVE my island!! You need to become familiar with Osmo Top Oil finishes for wooden kitchen work tops and general wooden interior trims. I used it on my Paperstone counter top as well and it is gorgeous. It is from Germany and is a special oil and wax comination made of natural plant oils and waxes. It is a food grade approved treatment, much better than mineral oils. I worked for a butcher block manufacturer and that is all that we used. It is imported into the USA by Environmental Home Center -- 206.682.7332, www.osmo.com.

@Lori Johansen What kind of wood are your 2 x 6s? What kind of glue? Thought I might attempt this myself.

I got mine at Menard's. It was 3 ft by 6 ft and I had my local friendly carpenter cut it down to 4 ft. He also planed it for me. it was on sale for less than $100. It is birch. Sorry I just realized you need 7ft.

have you considered reclaimed wood? If you live that far from an IKEA i'm making an assumption that perhaps you're out in the country somewhere?? Check locally for reclaimed.

I found a butcher block type , (prolly a 12x16) at Home Dept. They are at the end of the isle in the piece section. Buy how many u want depending on the thickness and length u want. Glue each on top of the other , depending on how long and how thick u want them. ( elmers wood glue and clamps will work for this) Then sand , 120 then 220 grit. Then u will have to seal with a wood counter sealant and let cure for a couple of days.
