Just waiting to be bottled!
After hours of picking and freezing.....
Make a mash of raspberries.
Ready to bottle. Just make sure Mr. Penguin doesn't get his beak in your wine or there'll be none left.
Ready for the wine cellar. Check out my blog for a step by step tutorial!

Here is another idea I have used may times..... RASPBERRY OR BLACKBERRY CORDIAL..... I started making it in the 70's, for husbands grandparents, who were in there 80's. Like many, always a problem what to get for CHRISMAS....SO,In the summer when I pick fruit....PLACE 2 C. of fresh berries in a QT.jar....FILL the remainder of the jar with SUGAR CUBES,,,, FILL the jar to the TOP with VODKA..... PLACE IN FRIG - FOR 2 WEEKS, TURN 1-2 TIMES A DAY.... by the end the sugar has dissolved, making the most yummy cordial...strain pour in to a fancy bottle, add a decorative ribbon.... I have also used peaches and apricots,,but it is cloudy, the color of the berries is rich and intense.... perfect after dinner when its cold and you want just a sip to warm you! BY THE WAY,,,,use the berries on top of ice cream, ENJOY,,and CHEERS..

@Wanda sinnema I forgot to ask you if I have to use the stronger vodka for making the cordial? The recipe I used for the mixed fruit called for higher proof vodka, although I just used regular, but if I make the raspberry cordial for gifts, I will buy the proper ingredients.
