I peel a whole head or two, chop it up in my food processor, dump it into a little jar & cover it with olive oil. Keep it in the fridge & use as needed in recipes.

Better Idea: cut tops & bottoms off of garlic. Place in hot tap water; let set for 30 secs; & voila...... peels just pop off. My husband heats water on the stove (not boiling), pops garlic in water for about 5 sec; removes w/strainer; cools about 5 secs; & done, done, done. We have a whole quarter peck to clean & dry. Looking forward to easy work this year.......
