Rustoleum sells countertop kits with which you can paint them.
I painted mine with a rustoleum product (actually made for outdoors); it is a thick "paint" with a sand in it -paint it on, let it cure, paint it any colour you like (I went with black but if you have so e skill, you can make it look like stone) then top coat with many coats of polyurethane -when done you can chop on your counters and do NO damage, easy to keep clean and it looks super! Note: you can keep the rough surface with less coats of paint and polyurethane or keep layering until smooth
If they are Formica, they may just need to be freshened up/ re-polished, if the "top coat" has worn through.
