Painting is always an option, and you should also check with your local Home Depot. They hold DIY classes with a trained professional who provides assinstance with certain projects. They may offer modifications or additional assistance if you let them know in advance of your needs.
Wreaths, sign painting, furniture painting, gazing balls, etc. A lot of the projects on Hometalk can be done with one hand. You can find ways to improvise tools to assist as a second hand. Spring clamps can be used to hold items. Clothes pins can hold small parts and be use to place them where you want them.
