I know this isn't the typical Hometalk tutorial but stay with me...it is a cleaning hack, creative project, and a quick and easy weeknight dinner solution.
Everything here was already in my pantry and fridge, and most of it needed to be used up soon. Eggs, heavy cream, a variety of shredded cheeses, vinegar, parsley, nutmeg, garlic powder, tarragon, and leftover veggies and meats. I also had pie crusts in the freezer.
Preheat oven to 350 degrees. Bake crusts for 10 minutes. Set aside. Saute the onions and other veggies in a little olive oil. I added in the sausage. I mixed it all together and set aside. You will need approximately 2 cups of this mixture. More or less to taste.
Beat 6 eggs and 2 cups of heavy cream together then add in 16 oz of shredded cheese. Use any combination of cheeses... I usually just clean out what's ever in my cheese drawer.
Add in 1/2 tsp of white vinegar, a pinch each of tarragon, nutmeg, parsley, garlic powder, salt, and pepper. Then dump in the meat and veggies. Mix well with a spatula.
Pour mixture into two crusts and bake at 350 for 45 to 55 minutes, until set.
Remove from oven and let cool at least 20 minutes before serving. You can serve one and freeze the other for another meal. And even better, you have used up meat, cheese, and veggies that weren't going to last much longer. Enjoy that extra space in your fridge!
