personal preference
It's really a personal preference. Many pick paint as it can be less work than sanding and re-staining. If you decide on paint, I would recommend looking into Dixie Belle Paint. I love them and they are great to refinish furniture. Little to no prep work, little goes a long way, and they have great customer service that can help you get exactly what you need and walk you through it.
I would paint them......use a soft gray or off white. We have used AS chalk paint & Dixie Belle chalk paint successfully.
We did seal our work with wax or polyacrylic. My Dixie Belle supplier recommends using a product called Gator Hide to seal/protect high use items like cupboards, table tops, counters.
