Glass mosaic tiles can be had for $4 a square foot if one shops very carefully. Going rate is more like $10 a square foot.
They can be cut with grozing nippers, but it is not easy, so buy small sizes.
Mastic to wall and grout with acrylic modified non-sanded grout and then seal the grout a week later.
Tile would be my favorite. It isn't difficult to do, just time consuming and meticulous.
