I'm not sure what you mean by "rest". But you would would install in the bathroom just as you would any other room. You wouldn't put it in the tub surround area because it is wood and will be easy to rot.
Yes bead board would rest right on top of your baseboard molding. You can finish it off by putting another molding around as the chair rail.
On the bottom it rests at your moulding and at the top it stops at your vanity.
