That is a matter of preference.
Firstly decide on how much the room and then how much artificial light. Gloss has I high reflective look, semi gloss is a little duller. Eggshell is ideal for places like kitchens as no steam or grease can ruin it and it is highly washable. You didn't say what you actually wanted the paint for.
It all depends upon what room you will be painting. You generally use gloss in rooms like your kitchen and bathroom for the durable finish. Paint stores recommend flat paint for bedrooms, but I prefer a satin or semi gloss myself because they are easier to wash and keep clean. Textured paints are lovely, but once on your walls you are stuck with them should you decide to repaint at a later date.
What you actually mean sheen and not texture. There is a basic rule of thumb. But not written in stone.
