What is the best type of paint to use to paint kitchen cabinets?

Make sure they are clean and dry. Use acrylic latex paint. Remove the doors and hardware. Mark the doors and cabinets with tape where they go. Lightly sand the doors and cabinets to remove any gloss and roughen the surface for paint. Prime with a stain blocking primer like Zinsser 123. Then paint with your color. Seal with at least three coats with a water based polyurethane. Use a small foam roller and foam brush for a smooth finish.

Something waterproof, so you can scrub off the oopsie spill!!!

There are paints made especially for this application, you would find them at most paint stores. Ask if you are not finding them on your own. But what is really important is the prep and letting the paint, once on, cure completely. Letting the paint cure for at least a week will usually keep all of those little chips and smears from even happening.
