That is personal taste,if it were me i would stick to white.
Lay out a couple of your subway tiles on some black paper and see how you like to look of the contrast. You can also see examples of tile and grout combinations on Houzz or of course, Pinterest.
I used white subway tile in my kitchen. I didn't want white and black would definitely not have produced the look I was after. Mine is subtle. Use silver or platinum. No shine or glitter in these colors just a very subtle gray.

On of the issues is finding the same grout color to be used on both the white subway tiles and the adjacent course of color accent - photo attached. This sample has white grout and I can't see it with grey (for example) - but bright white seems best to bring out the rich tones in these glass mosaic tiles. Any other thoughts?
I prefer white, especially because you have a lot of other colors going on good luck! Keep us posted on your choice!
I have subway tile surrounding my bath tub. It has white grout and it always looks nice and clean. I definitely would not use black as a first choice. Start with white and you can always go back and paint/stain the grout later.
