Do you mean for storage? With all the things people are making with pallets I bet you could even find a tutorial online- I say go for it and please post pics when you are done!!
Althoug trying to use pallets for other purposes is a huge fad right now, building a seating nook is not a job for an amateur. To do it correctly, one must have the correct tools, supplies, and a minimum level of carpentry skills.
Problems with using pallets for any indoor use include that the lumber will not be level, will likely be warped, possibly partially rotted, etc. When you start to rip the lumber in the pallets apart, the pieces will likely crack, break and bend, will not withstand the manipulation of nails, and will likely be too dirty to hold glue.

I have seen tons of tutorials for turning pallets into seating- most were for outdoor seating but that being said I'd bet there are some for indoor kitchen seating- try Googling "kitchen pallet seating" and check out what comes up... or modify the outdoor seating to suit your needs!
