Get paints chips or samples and take them home and see what color looks best against all of your stuff. Maybe an accent color that is used very sparingly in your home.
Just do white and make the bricks disappear. It's a clean and easy look
Myself I think that you should use the wall color, as the mantel will be like a picture frame for it and it goes with the same way as the window frames are against the wall color. It will not make the bricks look bad, it will just bring out the mantel as more of a focal point.

Use Black Solid Stain. You will retain the texture of the brick and the black will blend with the black of the firebox. Here is are pictures of our before and after fireplace. The original just shows the black firebox. The after shows the trim we added to an area larger than the firebox where we stained the brick inside the trim with black stain. (Stain will not flake off like paint will.)
my opinio, I would paint them Burgundy and grey then very slight dabs of off white on the bricks to accent them. Use a sponge, dab it in the off white paint and the dab it off on a towel. This will give you a little amount of paint, and give the bricks an antique look. Hope this helps. 😬
