Hello! Actually there are cleaner/sealer products out there sure shiny countertops. Polyurethane is not the only product that can be used. Tale a look at the ad below that states only one coat of their product is needed .

you need to use polycrylic so it does not yellow, applying g a few coats allowing to dry in-between
Those bars use an epoxy - needs to stand up to moisture, spills and constant wipe down. Here you go!

Use Famowood two part epoxy
Hi Whiskey Sour, if it is wood, use a furitchure spray, like mister sheen. Don't use anything that has silicon in it. When, using @ spray, don't spray directly on to furniture, allway's sray your cloth then buff. I am commenting on not seening the bar serface. Depending on the serface you may need to give the surface @ light sand @ coat with polly urethane instead. You might be best to apply to coats of polly urethane. Hope this helps. Be nice if you could post a picture when you are finished. I woild like to see how it the finnish turns out. Hope this is helpful Kay Adelaide Australia

otherwise you use crystal clear bar top epoxy and pour it on.
Hi! There are several types of high gloss finishes you can use apply to your bar: polyurethanes and epoxy resins. If you want the most durable finish then choose one of the table top polyurethanes. Otherwise get epoxy resin, it will create more interesting look: for example you may add dye to add color to your bar.
