Do you want to replace the ceilings with something or a cheap fix?
I've seen where you can actually use 'ceiling tiles', but don't know how much they cost.

Styrophome tiles are inexpensive. Once up and painted look beautiful like the metal tiles fraction of cost. Sell them on Amazon
You could also put up inexpensive sheets of beadboard panelling, depending on what look you're after.
I actually wallpapered a ceiling in our addition with textured anaglypta type wallpaper. Its thick and comes in patterns like a tiled or tin ceiling. We used that to cover up the new drywall ceiling, which was so much easier than mud and sanding. You can also paint this wallpaper!

I have popcorn ceilings but they don't bother me that much. However, I have looked into covering them and I agree that either the lightweight patterned tiles or bead board wood work. I've also looked in to using tongue and groove flooring (laminate or real wood).
With any of those materials, make sure you're nailing/screwing into framing, not just air. If you're considering adhesive, make sure you have a smooth surface (remove any loose popcorn or whatever is on the ceiling).
Use molding to create the effect of a tray ceiling... If your room is big enough. Or paint it . Use light blue like the sky.
