Before you go any further, install an exhaust fan with a timer. set the timer for 1 hour after each use and you will be amazed at the reduction in humidity. If you have no way to exhaust the air to the outside them using a small counter-top model with a timer works
Ventilate the bathroom. You should pay special attention to removing the moisture from your bathroom regardless of wall covering.
I agree that the bathroom should be well ventilated with a good fan or window that you leave open. We did our guest bathroom with shiplap and painted the wall underneath with a good primer (Kilz) first.
A ventilation fan would help the moisture issue.
Definitely install a good vent fan, but also make sure the ship lap is real wood and not mdf.
