With chalk paint wax or a water based poly. You can use the polyurethane over the wax for a more permanent top coat!
You don't seal it if you use a wax which is what most people use for the appearance of the piece. Typical sealants won't adhere with a wax on it.
Polycrylics, are an excellent alternative to use over chalk paint that doesn't have a wax finish on it, for several reasons. Mostly they offer more of a permanent, durable finish that does not need to be reapplied (like a wax does). They are not heat sensitive like waxes are and they do not need to be completely removed should you chose to repaint.
I would use a non-yellowing polyurethane if it is something that will be used regularly (like a dresser); if it is decorative, you could put a nice wax over it.
They sell a matte sealer that you can paint over the chalk paint.
