You could try cork flooring which is warm to walk on and functional in a kitchen. It comes in various sizes such as planks, etc.

Personally I like Lino.. i feel your pain about the slab foundation had it in house no.1. At big box diy store there are anti fatigue mats, or play mats. The play mats come in colors, or you can find them in black. I put them in the basement in front if the washer and dryer, and at my folding table. They also insulate my tootsies from the cold concrete in my breezeway.... I have a shoes off policy for the house. A package of play mats gym mats wasn’t horribly expensive.

Try double sided tape on the bottom of your mats. That should help keep them from tripping you.
Check out the new floor coverings at your local DIY stores, most flooring now-a-days is cushioned and is easy to walk on. For stressed legs consider new shoes or replace the soles on your every day shoes or put in gel inserts. And yes, good idea for cushion mats where you stand, or even a bath mat in so many choices.
