My Son went with butcher block which can ba ordered at a lumber yard. Seal it well and it is beautiful!
You would not want to stain the wood. The point is to bring out the natural beauty of the wood and seal it against food and water stains. You will have to reseal it periodically when the wear and tear of everyday use marrs the finish. The most important thing to remember is that you cannot use just any oil based sealer because it must be safe for food preparation. There are food safe sealants that you can buy that are intended for that purpose.

If you are maintaining a butcher block, you use food grade mineral oil.
You can also use a live edge slab of wood of any species if you seal it with 2 part epoxy. The slabs are usually 2" thick and cut to the width of desired table or countertop. The epoxy is called a bar top pour. I would look for someone who has their own saw mill to cut a log for you, or sometimes in areas with logging they are found in small wood yards of local carvers and chain saw artists. There are 4 in my town here.
Sometimes you can also recycle an old building beam if they are planning to tear down a building built in 1800s - 1900s.
