Where do you live? Is the inside already converted or planning? Is the ceiling drywall, or wide open. All make a difference. Answer and I'll try to help.
Try using foam board insulation and then cover with burlap. This worked on the walls of a radio station I worked at in Texas.
If everything is open, spray foam insulation is great. Check out this old house websites.
