Oil based will yellow over time. It will also add a yellow cast to lighter paint colors. It can react with certain paints alligator, crack, and peel. Water based will not yellow, dries fast, and protects just as well as oil based. I always use three coats of water based no matter what I'm sealing.
Go with the water-based finish. Makes for easy clean-up and looks great!
