Might be a moisture problem or a heat problem from the light try using a led of compact flourescent bulb in there if its a heat problem. Add or use a vent fan if its moisture related. Hope this helps you out.

I agree with it being a moisture problem. Probably from condensation. Lack of insulation around the box in the ceiling. As warm air migrates up it comes in contact with the cold and condenses. Do what DLS suggests. If it happens again you may need to remove the light fixture and use spray foam to seal around the box and opening to prevent warm air contacting the cold. Then replace the fixture.
