Stripping off A LOT of chalk paint

Roll some paint on a piece of flexible plastic or cardboard the height and width of the writing on the can, mask off the surrounding area on the can with painters tape, then lay the plastic with paint over the lettering and give it a light rub with your hand to move the paint onto the can. If it doesn't work wipe off and try again.
First spray the can with clear finish polyurethane, can be shiny or matte. Then rub over letters with dark brown or black wax. Remove any wax between letters with q tip.

Any value the can might have would be diminished by anything you do to it other than clean the rust off and I would not recommend being too scrupulous about that either!
Trace or paint the letters on one, n stick a piece of paper gently on it, use exacto knife to cut the letters out n use like stencil with spray paint
Maybe you can find someone who does stenciling that can do this for you.
