if there is room behind / beside the stove, consider a piece of 'HARDYBOARD - FIber/Cement siding -- can be painted, is fire resistant.
Lowes and HD sell rigid foam insulating panels. Cover with inexpensive self-stick backsplash material to insure fire resistance. Pull out your stove and slide it behind.
My range does not transmit any appreciable heat through the wall. If your wall is getting so hot that it causes concern, your should talk with landlord. This is not normal and could lead to a fire.
