To paint metal cabinets you will want to first clean them up with a good cleaner like TSP. Then to sand, you'll want to use a high grit number like 400. That should prevent scratching the surface; however, I'd do it gently and do a test on the back first. Wishing you the best.
I like to use 200 to 400 depending on the existing finish. Times I have used 150 on really rough surfaces. Most of the time it's just to remove any gloss and roughen the surface for paint.
I haven't painted mine yet, but several people have used chalk paint - no sanding required for that. Those that used spray paint, sanded with 220 grit, sprayed one coat, lightly sanded again with 220, and applied 2nd coat.
First, clean them with an industrial cleaner to remove any kitchen grease. Sand with 220 or 400 grit sandpaper followed by a metal primer. Then finish them up with a coat of acrylic latex paint. Have fun !!!
I would use 220 grit. It's enough to take any gloss off and prepare surface for paint. Best of luck to you.
