Matte paint describes the appearance of paint. Matte means it is "flat" or has no gloss. In this designation there is also satin, semi-gloss, gloss and hi-gloss.
Eggshell refers to the color of paint. Eggshell can be painted over very successfully with any color. If your final desire is a very bright white, you may need two coats or a primer and top coat.
Another distinction of paint is water- or oil-based. You can tell easily what type of paint you have by checking the cleanup instructions. Water-based paint cleans up with soap and water Oil-based paint needs turpentine or gas to clean up.
Oil-based paint is not used much because it is more difficult to clean up, dries slower and has quite a strong odor.
Generally speaking, you can paint oil over water, but water over oil may not hold unless the surface has been sanded or re-primed.
You were correct with your original question...Eggshell is not a color, but has a sheen akin to a real eggshell. Generally, matte should cover the eggshell finish, but to be sure, scrub the wall surface thoroughly. Paint adheres much better to a clean surface. Latex paint will not adhere to oil base, which will require that you "scuff up" the surface via sanding, to remove the oil base paint, first.
