Welcome! And congratulations on your new home. Can't wait to see what you have to work with.
I like to use tiles as a backsplash in kitchens and bathrooms. They are about 1/4" thick and will hide the gap at the back of the countertop - there always is one. The tiles can be attached to wall using Loctite's Power Grab that comes in a caulking tube. It is much easier and not messy like mixing up thin set. Press and hold for few seconds. Re-positional for a short time. Buy grout in a caulking tube for easy tile grouting.
Congratulations on joining the home owner's group. So glad to here you are rolling up your sleeves to make it your own.
I would strongly recommend neutral colors so that you can accent with any color you like and change out easily.
As for the back splash, I've heard more negative than positive remarks on the stick on "tile". I would read up and save up to put real tile. If you truly hate what you have, you can put contact paper or paint it as a temporary fix.
Good luck in your new projects.

Welcome to the family! Pintrest is your best friend when it comes to ideas for decorating, remodeling, etc. I do find myself spending a bunch of time on Pintrest and not implementing.
