Mum, they harden from getting moist and then drying out. Keep them in airtight jars and store in the dryest spot in your kitchen.

I always like to use the rice trick, and a bit of rice grain to your spices and that will absorb any moisture to stop it from solidifying
the best advice I can offer after cooking for 6 decades is first buy only as much as you will use in a 3 month period..I usually do this from the Bulk Barn...because they actually lose their potency if they are not used sooner....but if you fall into a sale of packaged spices that looks too good to be true, it usually is..they are not as fresh as they could be..so don't fill your cupboards with them...I learned this the hard way..in the end I just pitched it all and make a trip to the Bulk Barn or local Health Food Store...this really matters when it comes to cinnamon and nutmeg..
Keeping spices in airtight containers, away from light, heat, and humidity are very important points to keeping spices.
Never store spices on or near your stove/oven.
Tight sealing tins are far better than plastic or glass, screw top containers.
Depending on the size of your spice container-a ‘mini’ marshmallow should do the trick....
