Prime the walls with an oil base primer and then paint your color choice.
Good advice from Effie du. I would add that most paints now are paint and primer in one step. I painted the interior of my entire home (that has paneling throughout) with nothing more than paint.

Paint Wood Paneling - best methods?
It's important to use a good bonding primer that will adhere to the shiny finish of the paneling. ( here is my favorite bonding primer) Once that is dry, you can paint it with 2 coats of latex. I've used a 3/4" nap roller on paneling and have been successful with it covering most of the 'cracks' of the paneling. However, some are a little deeper, so I have a paintbrush on hand for those. Also, I'd recommend caulking the cracks to give it nice clean look. Here are some posts on my DIY & decorating site that cover these things:
