I have been given the job of removing 40 years of heavy grease from wood finished cabinets (gas stove and lots of fried foods). I really don't want to sand and refinish, I just want to get them clean

Degreaser like “Greased Lightening”
Open the windows for plenty of ventilation, spray on some BrakeKleen and wipe off with 0000 steel wool and some old rags. It's not flammable, but not something you want to breathe the vapors for hours.
Have you tried a spay called elbow grease? Leave it to soak after you sprayed it and it should cut though most of it. Use a rough/though sponge surface to help attack it.
elbow grease can be found in the pound shop. It's not at all expensive but very effective.
