Bought outdoor fabric at fabric store and used measurements from old canopy.
I recently did this for my mother on a 2 seater. We used an outdoor fabric that is specifically for this type of job. I used the original material as a pattern and replaced it with the new material. Adding small velcro straps to the attach to support bars worked the best in our case, I used hot glue to affix but E6000 would have been my preference if I'd had more time.

When you measure, add a little extra, especially if the old cover is not lying completely flat. It is always easier to cut off after finishing, rather than to be tugging and fighting with small seam allowances.
