I wouldn't. If you want a Removable or Fold-Up Backsplash you tile on Sheet Masonite or Plywood with Hinges that you just do not Fasten or Mount to the Wall. There are Many Contact Papers out there that actually make this effect work.

Using Old Blinds as a Back-splash!
Not a good idea. A back splash has to be very sturdy to endure scrubbing as grease from cooking can collect there. (reason you have one is due to cooking splashes) . The texture would draw dirt to it.
Although this project idea has been getting lots of 'talk' lately, it is intended to be attempted with pieces of faux wood blinds, not plastic or metal venetian slats.
I agree with others though who have already questioned the suitability of this material to be used as a backsplash covering, especially where the wall is frequently exposed to water, such as behind a sink.
If your wall is not level, it may be hard to secure the pieces on to the wall, and to have them stay adhered without popping up or sliding down.
