As the owner of a 100+ old house, I can guarantee that’s not enough. If nothing else, the house will continue to shift ever so slightly forever.
See the attached. Go lightly. Better to do a few very thin coats than have lots of sanding for a f8nal smooth surface.

If you’re going to drywall, find the wall studs first, and pencil mark the floor and/or ceiling as to their location Before starting to hang it.
The fewer marks in drywall the better. Less filling and less sanding to cover.
