I make teddy bears out of them and donate them to "Make a wish". They're very snuggly.
My mom made a mink teddy for me when I was in college. She could bear to toss them, so a mink teddy is among my unusual stuffed animals. She found a pattern, and just went from there. Have you taken them to a furrier to see if they can recommend a seamstress, or maybe wander around a craft fair to see if you can commission someone to make them for you.

I made throw pillows out of my mink stole. Cut two squares, (or any shape) - glue the edges together leaving enough space that you can use to fill the pillow.
