Use 3/8" exterior plywood cut at backsplash height to create a flat surface. Use construction adhesive to mount it to the brick. Now you can use any kind of backsplash you want and not worry about how to attach it to the brick or keep it smooth and level. Be sure to caulk the base, and I would finish the edges and face with a coat of poly to eliminate any worries about rot down the road. Alternatively you could use a product like Hardiebacker (great stuff!), but it requires special tools, a respirator and eye protection you may not have readily available.
Depending on your countertop and what look you are wanting to end up with. I like a beadboard backsplash.
What about the copper or stainless steel ceiling tiles.
To reflect the rustichess of the brick, and the look of the brick pattern, what about subway tile? We recently put a honed and tumbled creamy colored marble backsplash--clean, classic and a little rustic!
