I believe the least expensive shiplap is pine. You could consider reclaimed wood as well. Not sure of your budget, so you could purchase more expensive wood.
You can use cedar,oak,cherry or pine. All of those are going to cost you more money than buying an 8 by 6 piece of plywood and having it cut and too 6 inch width strips of 8 foot plywood. This is the least expensive way to do shiplap walls while still giving you the aesthetic appeal of authentic shiplap walls. But anyway do you want to is open to you, it's just will cost quite a bit more than the plywood cut into shiplap slats.
